Easy Egg-Free Tiramisu Recipe

This non-baked cake is a crowd pleaser and is so easy to make. Please let me know if you tried it!


Ingredients
475 gr mascarpone (can be substituted with cream cheese)
250 ml whipping cream
1/4 cup sugar 
1/8 cup icing sugar
2 regular packages lady fingers biscuit
1 cup coffee or espresso, room temperature
1 tbsp cocoa powder
1 tsp rum (optional)

Directions
In a large mixing bowl, beat mascarpone cheese or cream cheese with sugar until smooth and creamy. If you want to use rum, put it in now and beat some more. In a separate bowl, beat whipping cream and icing sugar until it doubles in volume and it forms soft peaks when pulled up. Fold whipping cream into the cheese mixture until smooth. Set aside.

Assembly
Dip a lady finger in coffee and lay it down on a medium size dish (I use a deep 6"x8" glass dish). Repeat this step until the bottom of the dish is covered. Pour 1/3 of the cheese mixture on top and spread with a spoon. Arrange another layer of coffee-dipped lady fingers on top of the cheese mixture and pour the second 1/3 of the cheese mixture on top. Repeat one more time and you will get a 6-layer cake. Sift cocoa powder over top and voila! Your tiramisu is done! Cover and refrigerate overnight before serving.



Tips
  • Lady fingers tend to absorb liquid like a sponge, so be prepared to act quick when you dip it in coffee, especially if it's still warm or hot.
  • When dipping the lady fingers in coffee, it's better to use a shallow dish slightly bigger than a lady finger. Deep cups do not work as you will need to soak it vertically.
  • If you have a larger dish, you can make a 4 layer cake (2 layer of lady fingers and 2 layers of cheese mixture)
  • Leftover lady fingers can be stored in a ziploc bag for your next tiramisu

Labuan Bajo 2023 Part 2 - Leisure Day Trip

I booked a leisure day trip for our second day in Labuan Bajo via Traveloka . When I say leisure, I meant a non-diving trip. We have a live onboard trip booked for the 3rd to the 5th day but that one is a diving trip covering different places and adventures so we tried to cram the other must-visits of Komodo National Park in one day. For breakfast that morning, we had breakfast boxes that the resort had prepared for us by order. The tour was operated by East Cruise Komodo and it was an open trip consisting of thirty-something people.
