This morning after Miss Kiki left for school, I found myself staring at 3 over ripe bananas. I had to do something with them, so I searched online for a recipe. One recipe caught my attention with the word "crumble" in it, and it called for 3 bananas! Well I took it as a sign that this was the recipe I needed.
I followed the original recipe fairly closely, but instead of making them into 10 muffins I made a bunch of mini muffins instead. Oh and I also substituted butter with oil. And they turned out really good! Especially the crumbs...

I followed the original recipe fairly closely, but instead of making them into 10 muffins I made a bunch of mini muffins instead. Oh and I also substituted butter with oil. And they turned out really good! Especially the crumbs...
What you need for batter:
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 bananas, mashed
- 3/4 cup sugar
- 1 egg, lightly beaten
- 1/3 cup vegetable oil
What you need for the crumbs:
- 1/3 cup brown sugar
- 2 tablespoons all purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon butter/margarine
Here's the How To:
- Mix all the dry ingredients (flour, baking soda, baking powder, and salt)
- Mix the bananas, sugar, egg, and oil
- Pour the wet mixture into the dry mixture and fold, just to moisten. Do not overmix.
- Use disher/ice cream scoop to put batter into muffin tins.
- Cut in the crumb ingredients together, to form a rough sand texture
- Sprinkle generously on top of the batter
- Bake at 375 F or 190 C. 10 minutes for mini muffins, or 15 minutes for regular sized muffins, or do the toothpick test.
- Enjoy!
