I have a KitchenAid mixer again. Yaaay! After contemplating for a long time on whether to get another KitchenAid mixer like the one I had in Canada, I finally caved in and bought one. There were only three types of KitchenAid stand mixer available in Indonesia, one of which had been out of stock for a while. That didn't leave me a lot of option. An Artisan type, or a Heavy Duty type. After consulting with my friend who is an expert in food and beverage field, I decided to go with the Heavy Duty one. Okay, I have to admit that I didn't need much convincing. :P So the model that I went with was 5KPM50E, which came with two bowls, a splatter guard, three attachments, and two lids for the bowl.
So it arrived this past Wednesday and Miss Kiki was quite excited about the large box and decided that she wanted to pose as a sales girl for the new object. Unfortunately, I didn't get the chance to try it until today, and I had to make something that I already have the ingredients for.
These butter cookies are commonly called Lidah Kucing in Indonesia, literally translated as Cat's Tongue. I'm not sure what the history behind the name is, but I think it's because of the shape. It was my first time making them today and I think it's a pretty successful one. Miss Kiki, The Hubby, and (my) Baby Sister liked it. So.... here's the recipe...
What You Need:
- 250 gr butter/margarine
- 150 gr icing sugar
- 1/2 tsp vanilla extract
- 250 gr all purpose flour
- 5 egg whites
The How To:
- Beat butter/margarine with icing sugar and vanilla until soft and fluffy.
- Stir in the flour.
- In a separate bowl, beat the egg whites until stiff
- Fold in the egg whites into the butter mixture
- Scoop mixture into a plastic bag (ziploc works well) and cut out one of the corners.
- Squeeze out onto a buttered cookie sheet in a 2.5" long stick shape, leaving space in between. They MELT!
- Bake at 160 celcius for 20-30 minutes, depending on the size of your sticks. Bake till golden brown and crunchy.
Miss Kiki and I had a lot of fun making these today, I had her scooped some flour, cracked an egg, and watch the mixer spinning really fast. She was so excited telling The Hubby about what she did. "I put pink shoes on, and went in the kitchen to make cookies. We used biiiig spoon of flour, sugar, and it turned really fast!" LOL
ps: pictures to follow!
