A friend of mine brought these scones to work one day and boy they were yummy! Of course, I asked for the recipe and she sent me this recipe from her book. Her recipe is in the photo below. Since i didn't have all the ingredients, I made a few substitutions. These are what I used:
3 cups all purpose flour
1/4 cup sugar
1 tablespon baking powder
1/2 teaspoon salt
1 1/2 cups cold heavy cream (whipping cream)
1 cup diced ham
1 cup chopped green onions (scallion)
The how to:
- First I mixed the first four ingredients in a bowl
- Then I pulled out my kitchenaid with the paddle attachment and start whipping the cream.
- Does your cream look whipped now? With soft peaks? Well continue whipping!
- Your cream will eventually separate into butter and buttermilk. Separate the butter and buttermilk.
- Keep the butter in your mixing bowl and using the same paddle attachment mix the flour mixture in just enough to form crumbles.

- Last, stir in the ham and green onions
- The batter will be a bit runny but thicker than a pancake batter.
- Use a disher or an ice cream scooper to portion half balls on a baking sheet lined with parchment paper
-Bake at 190 celcius or 375 F for about 25 minutes or until golden brown.
